Eudora will once again have an alternative for Mexican food.  Angel Alvarez will be opening Mexquisito Restaurant at 10th and Locust Streets around the end of February.

Alvarez, while new to Eudora, has been serving up Mexican cuisine in Lawrence for many years.  He has operated Tortas Jalisco near 6th & Kassold in Lawrence for around 10 years and three years ago, opened the first Mexquisito location at 712 Massachusetts Street in Downtown Lawrence.

“All my life I’ve been in the restaurant business,” Alvarez said. “My family has owned restaurants in California and I grew up in them.”

Alvarez will be taking over the building that most recently housed Los Agaves and prior to that Annabelle’s.  Los Agaves closed in September 2012.

With an opening just a weeks away and a restaurant that is completely empty, his remodeling and prep time will be limited.

“I want to focus in the kitchen which needs a lot of work and doing some painting as well,” Alvarez told us. “I also want to see if I can build a deck on the west side of the building so that we can have outdoor dining and tables during the warmer times.”

Mexquisito Restaurant will feature a traditional Mexican fare and plans to be open 7 days a week with extended hours on Friday and Saturday nights.

We asked for some tips on what to look for when he opens up in a few weeks and Alvarez paused for a long time prior to answering.

“It’s hard to pick a favorite dish, but one of the best ones is the Birria,” Alvarez told us. “It’s a slow cooked pork that is steamed in it’s own juices with peppers and spices. It’s almost like a brisket.”
