Erica Spurling was appointed to the Eudora Planning Commission by a unanimous vote of  the City Council on Monday evening. Spurling’s appointment comes at the recommendation of Mayor Scott Hopson.

Spurling was born and raised in Lawrence and moved to Eudora approximately three years ago.

“I’m excited to be a part of the planning commission and I’m looking forward to being able to help out,” Spurling said.

Spurling replaces Rose House who’s appointment was not renewed by the Mayor.

“I felt it was time for some new blood on the commission,” Hopson said. “With the appointment of Grant Martin and Johnny Stewart in the past months, and now Erica, we will have a fresh perspective on the commission.”

House, in a statement to, simply said that she appreciates her time with the commission and wishes the rest of the members well in the future.

“I’ve received many well wishes form the current commission members and I was very honored to serve with them,” House said.

Spurling will be sworn in at the next Commission meeting on July 6 at City Hall.

Java to Go is now open for business.  According to owner Erica Spurling, they will start serving Tropical Sno Shaved Ice from 3:00PM – 8:00PM Sunday through Thursday and 1:00PM – 9:00PM Friday and Saturday nights.

The coffee portion of Eudora’s newest business will start on Monday.  Java to Go will open at 5:30AM on weekdays and 7:00AM on Saturdays so you can grab a cup on your way in the AM.

Considering the high temperatures of late, we think Spurling may have picked the best time to open up with shaved ice.

Eudora will soon have another alternative for coffee in the morning. Java to Go will be located in the parking lot of C & S Market at 14th and Church Street.

Erica Spurling is the owner of the new venture and hopes to be open in the next few weeks.

“I’m planning on offering coffee, latte and smoothies.” Spurling said. “And during the summer evenings we will have Tropical Sno shaved ice.”

While the exact hours of operation are yet to determined, Spurling stated that she plans on being open early enough so that the early morning commuters will be able to grab a cup on the way out of town.

The grand opening date will depend on when all the inspections are completed.
